Pumpkin Seed Crusted Chicken (233 calories)


So I have made almond crusted chicken, walnut crushed chicken, etc. So I thought why not pumpkin seed crusted chicken? It is perfect for fall and pumpkin seeds have so many nutrients that are amazing for you. So here is my pumpkin seed crusted chicken.

Serving size 1

Ingredients:
1/8 cup ground pumpkin seeds (pepitas)
1/2 tsp ground cumin
1/4 tsp ground cinnamon
1/16 cayenne pepper (this will make is pretty spicy)
1/8 cup of sugar free almond milk
4 oz chicken
1 tsp Land O Lakes Light Butter and Canola Oil

1. Preheat oven to 375ยบ
2. Mix the pumpkin seeds with the cumin, cinnamon, and cayenne pepper. Place in a bowl.
3. Place almond milk in a second bowl and dredge the chicken.
4. Then place the chicken in the bowl with the pumpkin seeds and coat the chicken with the seeds.
5. Place chicken on a non stick pan.
6. Melt the butter and pour evenly over the top of the chicken.
7. Cook for 8-10 minutes and then flip and cook for another 8-10 minutes.
8. Enjoy
