So if you know me I am not only obsessed with pumpkin but cupcakes as well. So I made it my mission to come up with a pumpkin cupcake recipe that would be low in calories and for a full size cupcake. Most of the recipes I have found for lower calorie cupcakes make mini cupcakes that are 100 calories for one and if you are like me a mini cupcake isn't always satisfying. So I bring to you my full size Cinnamon Pumpkin Cupcake recipe that is 138 calories for a full size cupcake with frosting!!
Serves 24
Ingredients for cupcakes:
3/4 cup Land O Lakes Cinnamon Sugar Spread
1/2 cup baking sugar1/4 cup brown sugar
2 tsp cinnamon
1/4 tsp ginger
1/16 tsp cloves
3 egg whites
3/4 cup canned pumpkin
1 tsp vanilla extract
2 1/4 cup oat flour
2 tsp baking powder
1/2 cup sugar free vanilla almond milk

Ingredients for frosting:
8 oz (one package) Philadelphia 1/3 less fat cream cheese
1/2 cup canned pumpkin
1 tsp vanilla extract
2 tsp cinnamon
5 tsp brown sugar
For Cupcakes:
1. Preheat oven to 375°.
2. Beat the cinnamon sugar spread, bakers sugar, brown sugar, cinnamon, ginger and cloves until light and fluffy.3. Beat in the egg whites, pumpkin and vanilla until combined.
4. Combine oat flour and baking powder and gradually add to the creamy mixture alternating with the almond milk. Make sure to beat until everything is combined after each addition.
5. Line your muffin pan and divide batter evenly among 24 slots.
6. Bake for 16 minutes and let cool in pan for 5 minutes. Then move to cooling rack.
For Frosting:
1. Once cupcakes are completely cooled combine cream cheese, pumpkin, vanilla, cinnamon, and brown sugar. Beat until smooth and creamy.
2. Frost the cupcakes dividing up the frosting evenly.
