Baked Pumpkin Oatmeal


So in case you did not know I am obsessed with all things PUMPKIN! From the flavored coffees to my body wash if it's pumpkin I got to have it!!

So with it being Labor Day now being over and with Fall on it's way I am in the pumpkin mood! So for my first pumpkin post of the season why not start with something for the first meal of the day?


Pumpkin Oatmeal

Serves one

Ingredients:
1/2 cup rolled oats
1/4 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp pumpkin spice
1/4 canned pumpkin
1/4 cup sugar free vanilla almond milk




1.Preheat oven to 380°.

2. Combine the rolled oats, cinnamon, and pumpkin spice in a bowl. Then add the vanilla extract, canned pumpkin and almond milk. and stir until combined.



Note: I did not add any kind of sugar. If you would like a sweater oatmeal then you can add it not or sprinkle it on top once it has baked.

3. Pour mixture into a greased ramekin (or a large cup or small bowl). Bake in oven for 20 minutes or until firm. If you want to top to be more crispy like a cookie then turn your over to broil and leave in for an additional 4 minutes or until it reaches your desired crispiness.


4. Let cool for a minute and add a topping if your choose but I personally do not think it needs it!

5. Enjoy!
