Pumpkin Pie Pancakes (148 calories)


To me there is nothing better then a warm breakfast on a cool fall morning. Nothing says fall like pumpkin pie. So what a better breakfast then to combine the two? These give me that warm, full feeling and a huge smile on my face!
Serves 4
Makes 16 pancakes
Serving size is 4 pancakes

Ingredients:
1 cup buttermilk 
1 cup oat flower
2 egg whites
1 tsp baking soda
1/2 tsp vanilla
1/2 cup canned pumpkin
1 tsp cinnamon
1/16 tsp ground cloves
1/4 tsp ground ginger
1/8 tsp pumpkin spice

1. Combine buttermilk, oat flower, egg whites, baking soda, vanilla, canned pumpkin, cinnamon, cloves, ginger, and pumpkin spice. Let sit for 10 minutes.
2. Heat up skillet to 325ยบ and spray with cooking spray.
3. Once batter has sat for 10 minutes and the skillet is hot use an 1/8 cup measuring cup to create dollops on the skillet.
4. Flip them when needed (note: they may not bubble)
5. ENJOY & if you have leftover they freeze really well. =]
