
So I posted a photo of the prep for this on instagram and got an overwhelming response for the recipe. You asked so you shall receive!
The photo below shows every brand I used except for the chicken. I used Foster Farms Ultra-Thin Breast Tenders.
The recipe for the chicken is going to be fore a single serving.
Ingredients:
3oz of chicken
1/8 tsp garlic powder
1/8 tsp black pepper
2 Tbsp pasta sauce
1 Tbsp low fat ricotta cheese
2 slices of ultra thin swiss cheese
3 slices of turkey pepperoni
3 slices normal pepperoni
Procedure:
1. Preheat oven to 350˚
2. Sprinkle half the garlic powder, black pepper, and ranch seasoning on one side of the chicken. Flip the chicken then repeat
3. Apple the pasta sauce to the top of the chicken. Followed by the ricotta cheese. Next the swiss cheese then the turkey pepperoni and normal pepperoni.
4. Bake for 20-25 minutes or until fully cooked
5. Enjoy while its warm!
Serving size one piece: 253 calories, 11g fat, 5.4g saturated, 93mg cholesterol, 524mg sodium, 7.2 potassium, 5g total carbs, 1.1g fiber, 2.8g sugar, 33.2g protein. 7.4% vitamin A, 3.4% vitamin C, 24.8% calcium, 6.1% iron.
For the veggies this serves 4 people. You can use what ever veggies you like but these are the ones I chose to use.
Ingredients:
11 brussel sprouts
1 zucchini
1 carrot
1 package of mushrooms
1 Tbsp of Extra virgin olive oil
1/2 tsp ranch seasoning
1/2 tsp black pepper
Procedure:
1. Preheat oven to 425˚
2. Boil the brussel sprouts for 3 minutes then cut them in half. Now chop up all your veggies to desired size.
3. In a bow add the olive oil and toss the veggies. Then add the pepper and ranch seasoning and continue to toss until well distributed.
4. Spread out evenly in a pan and cook for 10-14 minutes.
Serving size 1/4th: 95 calories, 3.9g fat, 0.5g saturated, 0mg cholesterol, 82mg sodium, 663mg potassium, 12.7 total carbs, 4.8g fiber, 4.8 sugars, 5.5g protein. 33.8% vitamin A, 136.1% vitamin C, 4.8% calcium, 12.3% iron.
