Southwestern Chicken Pileup

Ingredients:
1 tsp salt-free Mexican seasoning
1 oz boneless, skinless chicken breast, trimmed of visible fat
1 whole-wheat pita bread
3 tbsp red pepper hummus
1/4 cup organic black beans with no salt added1/8 cup red onion
1/4 cup shredded part-skim mozzarella cheese
4 tsp guacamole
Steps:
1. Preheat oven to 375° and preheat a grill to high.
2. Sprinkle the seasoning evenly over chicken. Place chicken on grill rack then reduce heat to medium. Grill for 3 to 5 minutes per side or until done. Transfer to a cutting board and let stand for 5 minutes then cut into bite size pieces. Set aside.
3. Place pita bread on non stick baking sheet. Spread hummus evenly over the bread. Then top evenly with beans, chicken, onion, red pepper. Put the cheese on top last.
4. Bake for 6 to 8 minutes or until cheese is melted. Let stand for 2-5 minutes to cool. Transfer to a serving plate and cut into 4 wedges (scissors are the easiest way I have found).
5. Top each wedge with a teaspoon of guacamole.

(I use Ms. Dash Extra Spicy Seasoning Blend Salt-Free, Foster Farms Breast Tenders, Trader Joe's Whole Wheat Pita Bread, Oasis Naturals Red Pepper Hummus, Eden Organic No Salt Added Black Beans, Tillamook Shredded Low- Moisture Part-Skim Mozzarella Cheese. The guacamole is homemade with an avocado from a tree outside with nothing added to it.)
