Who doesn't love muffins?!
I personally love them! However as far as muffins are concerned you have to be careful as so which ones you chose.. So many muffin & muffin recipes are FILLED with tons of sugar & fat.
So recently I have been in search of a blueberry muffin recipe that is clean & healthy but also moist. After much trial and error I have finally come up with the PERFECT recipe! This recipe is a combination of two recipes I have tried in the past. They were the best two so I thought why not combine them?
Recipe makes 24 muffins (48 mini muffins)
Ingredients:
Olive oil spray
2 1/2 cups whole-wheat flour
2 tsp aluminum-free baking powder
1/2 tsp baking soda
1 box Fiber One Blueberry Muffin Mix
2 bananas, mashed
3/4 cup Oikos plain greek yogurt
1/2 cup organic honey
1/3 cup Land O Lakes half light butter & canola oil (5Tbsp 1tsp)
2 tsp vanilla extract
1/2 cup water
2 egg whites
1 cup organic blueberries
Directions:
1. Preheat oven to 375°. Put muffin liner into muffin tins. Spray muffin liners with olive oil.
2. In a medium size bowl mix all the dry ingredients: whole wheat flour, baking powder, baking soda, Fiber One mix.
3. In a large bowl mix together all wet ingredients: bananas, yogurt, honey, butter, vanilla, water, apple sauce, egg whites.
4. Gradually add dry ingredients to wet & mix just until combined. Note batter will be thick.
5. Gently fold in blueberries.
6. Distribute the batter evenly among prepared muffin tin.
7. Bake for 14 minutes (your oven my vary)
