Rosey's Pumpkin Whoopie Pies (127 calories)



Let me just start off buy saying that when I made these I had a serious sweet tooth and these seriously hit the spot!!

 If you don't know what a whoopie pie is it is a sandwich type cookie with some kind of cream cheese filling in the middle.

That being said.. I do not know that last time I had a whoopie pie but I was craving one! So I started looking up recipes and was shocked. Most of the recipes I found had over 600 calories for one!! So I went to work on how to make them still amazing but able to fit into my calorie budget. So I present to you my Pumpkin Whoopie Pie Recipe.




Serves 7

Ingredients for cookies:
1/2 cup oat flour
1/4 tsp backing powder
1/4 tsp backing soda
1/4 tsp cinnamon
1/8 tsp ground ginger
2 Tbsp Land O Lakes Cinnamon Sugar Spread (room temperature)
1/4 cup & 1 Tbsp bakers sugar
1 egg white (room temperature)
1/4 cup canned pumpkin
1/4 tsp vanilla extract

Ingredients for the cream cheese filling:
1 oz Philadelphia 1/3 less fat then cream cheese
1 1/2 Tbsp Land O Lakes Cinnamon Sugar Spread
1/8 tsp vanilla extract
1/3 cup powdered sugar

For cookies:
1. Preheat oven to 350° and lightly grease a baking sheet.
2. In a medium size bowl combine oat flour, baking powder, baking soda, cinnamon, ginger.
3. In a large bowl combine the Land O Lakes Cinnamon Sugar Spread and beakers sugar and beat on medium speed for 2 minutes and 30 seconds.
4. Add the egg white and beat until all combined.
5. Continue to beat and add the pumpkin and vanilla until it is mixed in.
6. Add in the flour and finish mixing once it all all combined.
7. Drop the batter onto your greased baking sheet using a level tablespoon. Try to get them to be symmetrical it will make your cookies look prettier.
8. Bake for 8 minutes and 30 seconds. Then let cool on the baking sheet for 4 minutes and 30 seconds before transferring the cookies to cooling racks.
9. Let cool completely before adding frosting.

For cream cheese filling:
1. Combine and beat cream cheese, cinnamon sugar spread, and vanilla until fluffy. Add the powdered sugar and mix until combined and fluffy again.
2. Spread over 1/2 of the cooled cookies using 2 tsp per cookie.
3. Complete your whoopie pie by completing the halves and enjoy!

Nutrition for one whoopie pie: 127 calories, 4.4g fat, 1.9g saturated fat, 7.9mg cholesterol, 94.7mg sodium, 28.3mg potassium, 20.5g carbs, 1.1g fiber, 14.8g sugar, 1.9g protein, 23% vitamin A, 0.1% vitamin C, 0.8% calcium, 1.8% iron.
